Domiati cheese, also referred to as white cheese (Egyptian Arabic: جبنة بيضا ‎ gebna bēḍa [ˈɡebnæ ˈbeːdɑ]), is a soft white salty cheese made primarily in Egypt, but also in Sudan and other Middle Eastern countries.

from Domiati cheese were identified as C. sakazakii (4%), while those isolated from Kareish cheese were identified as Discovered when making Areesh Cheese that I could only put in 500 Sour Milk (50 cheese). This was after I had put in 80x for all other ingredients. Need to test to see if that is a limit on 500 of any ingredient when making cheese. I would advise when making cheese to put in the largest quantity item first to avoid wastage of precious ingredients. In Domiati cheese, where 5–15%, w/w, NaCl is added to the milk (Abou-El-Nour, 1998), the effects of NaCl in curd formation are off-set by the use of water buffalo milk, which has a higher casein content than bovine milk, or by the fortification of milk with skim milk powder, and/or the addition of CaCl 2.

It is the main hard cheese in Egypt. It belongs to the same family as Pecorino Romano and Manchego.
